Monday Things!

Hey Everyone! Hurricane Sandy is kicking some butt here in Boston but so far I haven’t lost power! Fingers cross is stays like that. So, I’m using my day off to write some blogs and do some Halloween crafts. Stay safe everyone!

Look who I saw in Salem!

Fall dinner with friends! We made Autumn Pizza with Sage pesto, butternut squash, caramelized onions, vegan sausage and vegan cheese. YUM!

Monday Things

um, I realized that the majority of pictures I’ve taken have had a halloween theme. So I’m embracing it!

Don’t mind the out of focus-ness here. I was still playing with my new phone. ‘Oh that green square means its focusing?? Crazy!’

I worked hard this weekend to get some more fall/halloween themed recipes ready for you guys and I can’t wait to share them with you in the upcoming weeks. Stay tuned!!

Monday Things

Boxseats at the Red Sox game with BJ. We had a great view!

Portland, ME! I took a spur-of-the-moment trip there to visit a friend and totally loved it. Sadly, it  rained all weekend . (I have no idea who that woman is but she took forever to take that picture)

An ornament I found at the christmas store, Country Noel, in Maine. So the important question: Why doesn’t EVERYONE own a beer-guzzling, tribal-tattooed merman christmas ornament?!

Had dinner at the restaurant, Silly’s, which had the best selection of ‘normal’ food and vegan food. We got vegan fried pickles for an appetizer and I got a breakfast burrito and a mint chocolate soy milk shake. Everything was insanely good!

Ok, I’ll end with the picture of food since this is a food blog. Remember last week when I posted FOUR posts? In one week?? Let’s try that again!

Weekend

I’ve long ago accepted the fact that posting on a Monday aint happening. I need a day to grieve that the weekend is gone and I have five long, painful weekdays in front of me before I’m free to play all day again.

With that said, this is what my last few weekends have looked like. This doesn’t count as a real post; there are no recipes. With fall coming, I may make this a tradition to help ease me into the week and use up those photos I take but have nothing to do with:

Sowa markets on Sunday are great this time of year! Clover BBQ Seitan sandwich is the best!

Our war on Pantry Moths continues. I’ve had to throw away so much food! Silver lining: At least my cabinets are super organized now?

Ok, I’m done. I should probably just get an Iphone so I can post all this crap on instagram, right?

Vaca

Hello, Wicked Vegan Readers,

I hate to do this but WV is going on a bit of a hiatus this week. I’m wrapping things up at my second job, and fall it right around the corner, so expect things to resume the regular 2 or 3 posts a week schedule starting next week. I’m looking forward to sharing with you some homemade jam, fun quesadillas and before you know it, an onslaught of autumn themed meals.

So, come back next week!

<3,

Erin

Remember me?

This is the first week in a long time I haven’t posted at least one recipe and I’m feeling pretty bad about it. But it’s been a crazy 2 weeks. I’ve:

-Served jury duty. I was on the bench and then at the last minute got removed cause the defendant didn’t like me.  I was still there ALL day though!

Saw the Wombats at the Middle East in Cambridge. I can’t remember the last time I danced so much. They were awesome! Check out their song above. Also, their CD is on sale on amazon for $5 this month so definitely check them out.

– worked a lot at my real job

Saw the Celtics play the Bucks. We won! Woot!

-worked a lot at my second job

Did A LOT of crafting with Rachel for our craft fair, which was yesterday. We got together at least 3 times before the fair. We didn’t do too bad, either. We sold cute map coasters, reusable coffee cup sleeves, wrap bracelets, wristlets, head bands, etc/ She will be posting some tutorials of things we sold on her website soon so check her out.

– baked a Trail Mix seven-layer bar…which was consumed so quickly last Saturday by my friends and roomies that I didn’t even get to snap a picture. I’m hoping to bake it again for you this weekend, though!

With all this running around I did, I forgot Cinco de Mayo is this weekend. Which is unacceptable since it’s practically a day to celebrate my favorite drink- margaritas!

But I couldn’t neglect you completely, so here is a few mexican inspired recipes on my blog that you can make for this weekend if you want to do something a little different. If you only make one thing, make the fresh strawberry margaritas! I’ll be making a pitcher tonight =)

Black Beans and Quinoa Burritos

Crispy Margarita Tofu Tacos with Strawberry Avocado Tacos

Fresh Strawberry Margaritas

Black Bean Salsa

Spicy Black Bean and Quinoa Soup

Enjoy your weekend and check back next week! I have a full day free with nothing planned this weekend so you can bet I’ll be cooking you up some yummy posts!

Happy Tuesday, Everyone. Hopefully you are one of the lucky ones and you have a short week this week! I get the joy of working Black Friday at a book store so I don’t get much of a vacation.

Since I have your attention though, as a employee at a retail place, I must ask all you guys to keep three things in mind when you are doing your holiday shopping- please be patient with your retail sellers this holiday season, please pick up after yourself and please check the hours of your store.

A lot of the employees at these retails places have been hired just for the holiday season and don’t always know everything you are asking. Be Patient. They will do their best to help you and if you approach them with a smile and manners, they will be a lot more willing to go out of their way to find that obscure book/gadget you simply must have for your husband/mom/sibling/etc. Everyone is stressed during this time of year. I get it. I can assure you that the employee you are asking help from is far more stressed then you as a shopper at that moment so take a deep breath, smile and be patient.

Also, clean up after yourself. Don’t leave random objects in random aisles. Are you done with that coffee you are drinking? Awesome! Please find a trash can.  If you aren’t sure what to do with that DVD you decide you don’t want to buy, return it to someone who works for the store- the cashier, the info desk worker, etc. For instance, for the love of all that is holy, please do not leave 1,000 books on antiques spewd all over a table at 8:55 at night when the store closes at 9:00. I assure you, those employees, no matter how nice they are to you, do not want to stay any later then necessary during the holidays.

Which brings me to my next point, check the hour of stores!! If a store closes at 9, do not get there at 8:50 and begin to browse. The closing hours aren’t flexible! We will do our best to accommodate you but its pretty inconsiderate to expect an entire store to stay open because you didn’t plan accordingly. Especially when those employees have probably been running around like chickens with their heads cut off for a solid 5 hours, running on nothing but caffine and adrenaline. So please, please, check the hours of stores and be aware of the time

So remember kids- Be Patient, Clean Up after Yourself and Check the Hours of Your Store.

-End of Public Service Announcement-

Honey and Vegans

When I first switched to a vegan diet, I was really surprised to find that honey was excluded from the list of things that were ok to eat. Though I can see how vegans would consider honey to be an animal product, I don’t agree with eliminating completely from my diet. You can’t find a more natural sweetener!

My strong support of honey  comes from the fact that my dad is a beekeeper and has been on and off for a good portion of my life. When I was little, maybe around first or second grade, my dad was taking a beekeeping class and I went with him. I remember going down to the front of the class and being allowed to spin the honey out of the combs. It was really fun and clearly something that has stuck with me.

Currently, he has three hives which help pollinate is blueberries, apple trees, peach trees and big garden full of veggies. He also sometimes keeps them at local apple orchards.

The point is, I get to see how honey goes from comb to bottle and I know that the bees aren’t hurt in the process. At least not on a local beekeeper level. What would be the point? Beekeepers have to spend money for the bees and the equipment and often they do it as a hobby. Putting your bees in jeopardy would be financially unsound. Furthermore, there isn’t any unnatural manipulation going on. There are no chemicals or hormones involved in the process.

It is true that I don’t know how honey is produced commercially. The procedure could be less clean and natural. A lot of honey on the shelves in grocery stores is also coming from outside the states, such as China, which could have different food guidelines. But the chances are, there is a local bee keeper near you. Check out farmers markets near you, road side stands or orchards. I’ve seen beekeepers at all of them. There’s no reason to give up honey when you can get it from a good, reliable source. I know I certainly won’t. It’s all natural, organic AND you can support local beekeepers. What could be better then that?!

If I haven’t convinced you, no worries. Though I will still be using my Dad’s honey in my recipes, if you don’t feel comfortable using it, you can replace it with sugar, agave nectar or maple syrup.

Happy Monday, Readers. But more importantly,

HAPPY HALLOWEEN!

I that song is suppose to be for Christmas but I love Hallween WAY more. It’s sort of a big deal in my world. For the past few years, my roommates and I have thrown a huge party at our place. I start buying decorations weeks in advanced. My costume is usually decided sometime in September. I love it! This year, though, I’ve been juggling 2 jobs, a brand new blog and other hobbies so halloween seemed to come super fast!! I spent the first half of this weekend last minute preparing for our party because I was so unprepared. Then, I spent the rest of the weekend recovering from it! Oi! Good thing we only party that hard once a year.

Needless to say, your Monday treats will not be posted this week. I was so hoping to make you creepy shattered glass vegan cupcakes, which I found in the book A Zombie Ate My Cupcake. I had the ingredients and everything, but alas, I never got a chance to make them. So sad! We will resume our regular scheduling posting as the week progresses though!

Despite the lack of recipe, I wanted to wish everyone a super fun and super safe Halloween!

Love,

The Mad Hatter Erin

Rockin' the Halloween costume to work. What did you dress up as for Halloween??
