Friday Favorites

2. Two Girls advertised on Craig’s List for “Fall Boyfriends”. Highlights include “2 males interested in something steady/serious-ish…Interested parties should have a window in their bedroom and want to cuddle with the window slightly open to let the fresh autumn air in while a fall scented candle (that I’ll buy for you, babe) fills the room with cozy comfort”. Click here to read the whole thing. Aside from the fact that they are looking for a very specific type of dude I would never date (“Def in a frat or played a sport”), they are sort of geniuses. Why didn’t I think of this?? And is it too late to start taking applications???

DOLPHINS

4. THIS SCORE! This first game score. Are we serious with this Dolphin victory? The only team I route for above the Pats are the Dolphins so I was pretty pumped they were starting the season with such a solid victory. We’ll see how the rest of the season goes.

5. Pumpkin baked goods. ALL the baked pumpkin baked goods. I just…want them all. This is insane because for some reason, I am not in the fall mood at all. I mean, usually by September 12, I have my Halloween costume at least picked out. For whatever reason, though, this year I am reluctant to embrace it. Apparently pumpkin-flavored muffins and breads and cookies and bagels…and yeah…they don’t fall into that category. I will try and not post pumpkin things until it’s at least officially Autumn but I can’t make any promises.

I am SO happy it is Friday! It’s week two of the new school year and waking up early again is hitting me hard. I’ve been in grumpy zombie mode all week. I’ve wanted nothing but a serious nap. I went to bed one night at 9:30 and I still can’t shake it! This weekend I will be lounging in bed late every morning and soaking up the laziness! I think I may also work on some Valentine’s Recipes and check out Wolf of Wall Street. Has anyone seen it? Thoughts?

New Music: New Taking Back Sunday (duh!):

Favorite new exfoliant: Lush‘s Let the Good Times Roll. This was one of my Sydney Lush purchases and I can’t get enough of it. It smells amazing, like caramel popcorn, and leaves my skin so soft. The lady at Lush told me to use it every other day or every three days. It nearly kills me not to use it every night. Ob-sessed!  I think it’s seasonal, though :/

Favorite New Make-up: Garnier’s BB cream. I’m not going to get into a big make-up rant because I sound like a commercial. I will say getting up early, working with kids and living in a sunny, hot climate has resulted in me almost never wearing makeup during the day. When I do, I wanted something much lighter and gentler on my skin. This meets all those requirements. Plus, my skin actually looks better after I wear it. True story. Downside- it’s not all natural. Leave a comment below if you have a good all natural foundation you use.

Favorite Beverage: Boost’s King William Smoothy. It’s just cold, liquid chocolate. Perfect thing to kick my chocolate cravings. To make vegan, I switched the milk for soy milk and the yogurt for sorbet. In this case, I’m pretending all chocolate is vegan. I’m the worst vegan ever.

Favorite Treat: Popsicles. When I can’t afford the above smoothie, I reach for these. It’s been hot here and I’ve been on a cold treat kick. I made these fudgesicles a few weeks ago and had to force myself to keep them to a snack. A hot meal for lunch and dinner? Nah, bring on the frozen chocolate!

Mocha Fudgesicles
slightly altered from Take A Mega Bite

Ingredients:

  • 1 (14 oz) can full fat coconut milk
  • 3/4 cup vegan chocolate chips or vegan chocolate
  • 1 T instant espresso or 2 T instant coffee
  • pinch salt
  • 1/2 t vanilla
  • 1/2 T- 1 T sugar, depending on the chocolate used (my chocolate chips were sweet enough so I used 1/2T)

Place the coconut milk, chocolate, and espresso in a saucepan and heat until chocolate is mostly melted. Set aside for 5 minutes for the coffee to steep. Stir in salt, vanilla, and sugar. Taste and add more sugar to taste. Pour into popsicle mold and freeze for a few hours or over night.

If you do not have popsicle molds (like myself), pour into small paper or plastic cups, cover with tin foil and poke your popsicle stick through the tin foil. Freeze for a few hours or over night.

When ready to eat, run the mold under warm water. If you pull a stick out sans pop just run it under water and place back in the popsicle to freeze.

These were so creamy and delicious. I definitely hoarded them from the children because I didn’t want to share. I mean… because they don’t need the caffeine. yeah…we’ll go with that.

So today I’m sharing with you Peanut Butter Triple Chocolate Cookies, aka, The Resolution Breakers. These can be eaten in cookie format OR in cookie dough format. They have three kinds of chocolate, they have peanut, they have sugar, they are basically everything that people give up when they start the New Year and swear to eat health. I’m sorry but they are just too good not to share.

This song and the entire Save Rock and Roll album by the Fall Out Boys. I’ve listened to it every day this week during my work outs and I can not get enough. For some reason, I just really love FOB when I am in a foreign country. I can’t explain it

Sally Hansen- Golden Rule nail polish. It’s gold and glittery and nothing like the normal nail polishes I wear, which are black or red. But I’m half way through my Golden Rule bottle and I still love it so that speaks volumes. I tried to take one of those fancy pinterest photos of my nails and the nail bottle and honestly, it just wasn’t happening. Google it. You’ll find pictures a thousand times better then mine.

and finally, these Peanut Butter Triple Chocolate cookies. I’ve been craving chocolate like there’s no tomorrow lately and these seem to hit the spot. I threw in some peanut butter on a whim. My all time favorite peanut butter is Teddy’s and I received two jars from the states for Christmas. I’ve pretty much been eating it on everything which may or may not be a good thing. So, when I was making these cookies I thought, why not throw some peanut butter in? And then I thought, why not dunk the thing in even more chocolate.  Yeah…I think I have a problem.

Peanut Butter Triple Chocolate Cookies
recipe adapted from Cadbury Double Chocolate Chip Cookies

  • 1/4 C. butter, softened
  • 1/4 C. all natural peanut butter
  • ½ cup brown sugar
  • ⅓ cup sugar
  • 1 Energ-E egg
  • 1 teaspoon vanilla
  • 1½ cups self raising flour
  • ½ cup cocoa
  • ¾ cup vegan chocolate chips

1 cup of vegan chocolate chips for dunking (optional)

1. Cream together butter, peanut butter and sugars until light and fluffy. Whisk in “egg” and vanilla. Stir in flour and Cocoa then fold in the chocolate chips
2. Roll into balls and place on greased baking trays. Bake in  oven at 320°F/160°C for 10-15 minutes or until cooked. Cool on a wire rack.
3. Once cool, melt your chocolate chips in a double boiler (my preferred method) or in the microwave. Dunk half the cookie in the chocolate and place on wax paper to dry.

These also make DELICIOUS cookie truffles. To make, just skip step 2. Instead, roll your dough into balls, chill and then dunk in melted chocolate. This is equally delicious and you can save yourself 10-15 minutes if you are UBER craving chocolate. Or you can just mix the dough and eat it straight out of the bowl. I’m not judging.

I don’t know where you are but here in Boston, the weather is not pleasant! We went for warm, sunny spring days to gray and dreary. Sometimes, it’s gray,dreary, cool and rainy. Other times, it’s gray, dreary, warm and humid… with the promise of rain. But always gray and dreary.

I’m sick of gray and dreary.

And guess what this weekend’s forecast is suppose to be?

Yeap. You guessed it.  Gray and Dreary! and rainy. Which is going to be super fun during my outdoor concert! Oooor not.

Now, I’m not meaning to bitch here. I’m just setting the stage. I was planning on doing a spring friday favorites, complete with favorite spring shoes and drink and what not. Then, I was going to top it off with a nice very vanilla cupcake recipe with a nice spring twist- sorta.

But, the gray and the dreary are leaving me in a funk. So, I’m going to save the spring post until the sun is shining and the birds are singing. Instead, I’m going to do what any flood blogger would do in a funk. Post some yummy food to eat your emotions away with. Because it’s curl-up-in-bed-and-watch-a-good-movie-while-eating weather, not frolick in flip flops weather.

1. Favorite Store-bought snack: Hail Merry Strawberry Macaroons. Sorta tastes like a strawberry shortcake ice cream pops, minus the gross dairy and chemicals. Propylene Glycol Monoesters, anyone? I think I’ll nab one of these awesome macaroons, instead.

2. Favorite liquid: Metromint Water in Chocolatemint. Ingredients: water, mint, cocoa essence. That’s it. And it’s amazing. Have I talked about this before? I’m having deja vu…

3. Favorite Delivery discovery: Angora Cafe in Allston. They have soy fro-yo with pick-your-own toppings. But don’t bother. Just get Late Knight (soy fro-yo, coffee, oreo and cookie dough) and thank me later. “But Erin,”, your saying to yourself “there’s a $15 minimum delivery free and fro yo only costs $5”. Don’t sweat it, son. Order yourself a build-your-own salad for lunch tomorrow and then you have ice cream to eat during your movie AND you can sleep in late cause your lunch is already done. Your welcome.

4. And what goes really good with Fro-yo and snuggling in bed? Mug Cakes. Yeapers. This is my favorite:

Chocolate Mug Cake
from Chocolate Covered Katie

  • 1 tablespoon plus 2 tsp cocoa powder
  • 3 tablespoons spelt flour (or white, or Arrowhead Mills gf)(I used regular all-purpose)
  • 1/8 tsp salt
  • 2 tsp sugar or evaporated cane juice (I used 2 tsp of vegan cane sugar)
  • 1/4 tsp baking powder
  • 1 stevia packet (or 1 tablespoon more sugar) (I used 1 TBSP palm sugar)
  • 2-3 tsp of vegetable oil or coconut oil (I’ve tried it with oil and also with apple sauce, which CCK said may work. The cake comes out much gummier with apple sauce, though it’s still delicious)
  • 3 tablespoons milk of choice (I used  unsweetned vanilla almond milk)
  • 1/2 tsp pure vanilla extract

Combine dry ingredients and mix very, very well. Add liquid, stir, then transfer to a little dish, ramekin, or even a coffee mug. Microwave 30-40 seconds. If you don’t want to eat it straight out of the dish, be sure to spray your dish first (and then wait for it to cool before trying to remove it). Otherwise, you can just mix everything in a mug, microwave it and eat it straight from there. I opted to use my favorite mug 🙂

I lied my face of when I said I wasn’t doing another Friday Favorites. As I sit here, contemplating how I could possibly top the brilliance of my Veronica Mar’s post,  I realized, Oh wait, I don’t have to! I’ll just throw together all my favorites from the week and have that entertain you! Because really, the only thing that is more awesome then me rambling on about the pope, V-Mars and (more) St. Patty’s Day recipes, is Justin Timberlake…dressed as tofu!

Justin Timberlake’s SNL performance, which every vegan blog has posted this week. I don’t care. It’s brilliant!

Chocolove Chocolate bars– namely dark chocolate with almonds and sea salt or dark chocolate coffee. I’ve pretty much given up all desserts since Rachel and I entered this Team Lean Challenge…except this chocolate. It gets me through man…it gets me through…

I went to high school with this kid and have seen him exactly zero times since we graduated but I’m wishing that that wasn’t the case after reading this. It’s hysterical in a ‘oh-crap-I’m-totally-F*ing-guilty-of-this’ sort of way. If you are 20-something-ish or younger and have ever posted lyrics in your AIM away message/Myspace Profile/Facebook status, and your white, you’ve probably posted one of these lyrics. Or if you’re me, 6.5  of  them (not that Zac Brown song but definitely two others…crap). I’m apparently super white. Just read it.

I can’t NOT post my favorite Dropkick Murphy’s song, Wicked Sensitive Crew, 2 days before St. Patrick’s Day,. “…And we sure ain’t vegan!” It’s ok guys. I still love you.

and last but not least, Sunday brunch with friends! These donuts were made for the ‘donuts and carbs’ brunch we had a few weekends ago. That theme wasn’t intentional but no one cared. The food was excellent.

Thin Mint Donuts

from Cheeky Kitchen;

For the Donuts:

  • 1 cup garbanzo beans
  • 1/2 cup almond milk
  • 3/4 teaspoon baking powder
  • 1/4 tsp baking soda
  • 2 tablespoons vanilla
  • 1 tsp white vinegar
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1 1/2 tablespoon Earth Balance ‘butter’, melted
  • 1 cup vegan chocolate chips, melted
  • 1 cup whole wheat pastry flour

For the Glaze:

  • 1/2 cup vegan chocolate chips, melted
  • 2 tablespoons Earth Balanc, melted
  • 1 tablespoon almond milk
  • 1/2 tablespoon vanilla
  • 1 cup powdered sugar
  • 1/8 tsp of peppermint extract (or more to taste)

In a blender, combine garbanzo beans, almond milk, baking powder, vanilla, white vinegar, salt, sugar, and melted butter. Blend until pureed. Transfer to a large bowl and blend with the melted chocolate chips and flour. Transfer to a large zip-top bag and allow the dough to sit for about 5-10 minutes before snipping the corner of the bag, and piping into donut pans that have been generously sprayed with nonstick baking spray. Be gentle. This is a thick, sticky dough and I definitely popped my the ziploc bag I was using. Trust me, you do not want to have to spoon this dough in. I made such a mess!

Bake in an oven preheated to 350 degrees for 9-11 minutes, or just until the donuts set. Remove and cool for 3-5 minutes before turning your donuts onto a cooling rack.

For the Glaze:

Melt everything in a double boiler and frost the donuts!

Two weekends ago, before donut baking, I would have bet you a million dollars I had two, large, regular donut bans. I would have lost. Apparently, I only own heart shape pans. Nothing screams St. Patty’s day like heart donuts? Just roll with it…

Ok, I think this may be my last St. Patty’s Day post. I was hoping to post one more dessert recipe tomorrow (guinness truffles? Carbomb cupcakes?) but I’m not sure if I will get the chance. Double check on Saturday just in case. If you are celebrating all things irish this weekend, be safe! Don’t drink and drive! That’s illegal. Don’t wander around completely drunk! That’s dangerous. Don’t urinate in public. That’s also illegal, I hear. Don’t drunk text exes! That’s also dangerous…and dumb.  Be smart. And may the luck of the irish be with you!
