Hello! My name is Erin. I’m from Boston and here is my story:
For the past 16 years, I have been a vegetarian. Why I opted to do this, I can’t remember. Could it be because I loved the idea of being an advocate for animals? Possibly. I hadn’t even hit puberty yet so there wasn’t a whole lot I could do for them besides not eat them. It seemed a good place to start. Could it be because I didn’t really like meat? Also possible. Any excuse to avoid eating shepherd’s pie had to be considered. Or, could it be because theloveofmylife Jonathan Taylor Thomas told Tiger Beat he was a vegetarian? Also possible. He plastered my walls for many years.
The point is, the vegetarian life worked for me for a solid 16 years and I can’t say I ever missed meat. But after graduating college and moving to Boston, I realized I needed to change some things in my diet. Rumor has it that milk and cereal is not an adequate dinner 4 nights in a row…especially when said cereal also served as breakfast. Whoops! Apparently I was missing a few food groups there.
With this in mind, I looked toward a vegan diet. Its been a struggle but its been fun! I like the challenge of trying to make edible meals that don’t taste like they’re lacking anything. It also forces me to think before I shove something in my mouth, to think a little more healthier. Its inspired me to put down the cereal bowl and approach the stove top. I’m hoping this blog will help keep me on track while sharing with you some wicked good vegan food!
